Ginger and Tofu

In the last few months, food has become a very important thing in my life. Cooking has always been a passion, but this isn't about adult food it is about baby food. While grown ups compliment cooking out of courtesy or politeness or may be they really like it, a child's mind works very differently. They are the harshest-kindest critic one may ever see. My baby daughter started testing solids a few months ago. Initially the battle was what can I give her to eat - having no teeth was only a minor factor. The process of cooking made me appreciate the principles of 'mindfulness'. Never before had I thought of sterilizing the utensils, steaming veggies to an exact 6 minutes, pureeing soft boiled fruits. The baby relished pureed pears, lentils and chickpeas. Then came a point when my daughter refused to eat, she would not eat anything i gave her. Well then came the second stage where the young one wanted to try the food herself. It was a challenge to decide what to give one who doesn't have any teeth yet, swallowing isn't her thing yet. Watching her pick those single grains of rice and lentils and feeding herself was a miracle. Her appetite improved and it was relief. These days the food topic is back as our dinner table conversation. Now that A can manage to eat bigger chunks of food, but she sees it more like a game. Some of her favourite recipes include ginger and tofu.

Cut tofu into cubes,
add a teaspoon of grated ginger to a pan with bit of olive oil and butter,
Add tofu
Saute until the tofu skin is light brown in colour.
Add salt to taste
5 minutes and its ready.
